Not too many people know how to make black eyes peas way, and if you’re tired of eating mealy, gritty black-eyed peas, then you're gonna love my Bumpin version!
- 1 pound black eyed peas (soaked overnight)
- 1 chopped onion
- 1 can chicken stock
- 1 cup turkey bacon chopped
- 4-5 cup water
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 2 tablespoon olive oil
Drain and rinse peas in a colander, set aside. In a large pot add olive oil, cook bacon and onion for one minute on medium. Add chicken, stock, water, black eyed peas and seasoning. Cover pot, reduce heat to low heat. Cook for 45 minutes or until the peas are tender.
Note: If peas become dry, add a little water.
