What makes my Dirty South Catfish so good? It's the crunch when you bite into it and that Hip-Hop kick of spice. Here's a great recipe that combines a little heat from the south with the sweetness from my Grandmother's kitchen.
- 6-8 catfish fillets
- 1 large egg
- ½ cup milk
- 2 teaspoons low sodium seasoning salt
- 1 teaspoon garlic powder
- 1 cup corn meal
- 1 ½ cup olive oil
- 1 teaspoon black pepper
Rinse catfish fillets and pat dry with paper towel. In large bowl mix all ingredients, except corn meal and olive oil. Heat large skillet with oil over medium high heat. Place cornmeal on large plate, dip catfish in mixture and then in cornmeal for breading. Fry for 3-5 minutes or until golden brown. Drain on paper towel.
