My Eye Candy Yams are smothered in butter, maple, brown sugar and spices. They are the perfect side dish and easy to make.
- 4 pounds sweet potatoes
- 2 tablespoons nutmeg
- ¼ cup brown sugar
- 2 tablespoons cinnamon
- ¼ cup sugar
- 2 tablespoon vanilla flavor
- ½ stick butter
- Corn starch for thickening
Wash, peel and slice potatoes ½ thick slices. Boil until partially cooked. Arrange in baking pan. In a sauce pan combine brown sugar, sugar, vanilla flavor, nutmeg, cinnamon, 3 cups of water and ½ stick butter. Bring to a low simmer and thicken with a small quantity of corn starch and water. Pour over potatoes and bake at 350° F for 20-25 minutes.
