SWEET MOMMA POTATO PIE ™

This ain't no ordinary sweet potato pie - it is extraordinary. A pie that is positively bursting with flavor.

Ingredients

  • 1 (9 inch) pie crust
  • 1 ½ teaspoon cinnamon
  • 1 lb. sweet potatoes
  • 1 ¼ cup milk
  • 2 eggs
  • ½ tea nutmeg
  • ¾ cup brown sugar
  • ½ teaspoon salt
  • 3 tablespoon melted butter

Directions

Preheat oven at 400°F.

Peel, wash and cut the sweet potatoes into 1 in. pieces. Put enough water in a medium size pot to cover the sweet potatoes and add ½ teaspoon salt. Bring water to boil, and then turn the heat to low. Cover the pot and let the sweet potatoes simmer for 20 minutes until soft. Drain the water and mash the sweet potatoes in a large bowl. Beat the eggs in a small bowl with a fork. Add egg, milk, brown sugar, salt, cinnamon, nutmeg, melted butter to sweet potatoes. Mix well and pour into the pie crust. Bake the pie at to 350°F for 45 minutes.
